Peanut Butter Chocolate Chip Oatmeal Breakfast Bar

For vegans, finding a healthy breakfast bar is a real hassle. You will find eggs everywhere. This peanut butter oatmeal breakfast bar is true to health benefits with low-calorie intake. 

Here is how to make it.

  • Mix flaxseed and water in a small bowl and allow it to get thicker
  • In a large mixing bowl, combine flour, baking powder, salt, and cinnamon. Also, add peanut butter, maple syrup, whole oats, grounded walnuts, flax egg mixture, and water. Blend it well so that all the ingredients are combined. Top it up with a choco-chip and give it a light-handed stir.
  • Spread it evenly onto the baking pan and bake it for 25 minutes or until it’s golden brown.

Cheesecake Breakfast Bars

This is a low-carb breakfast option that is even great with wines! To make this, swerve cream and cheese, blend with coconut milk until nicely combined. Mix coconut flour and vanilla protein powder (using vanilla essence is fine too). Pour the batter into the pan, sprinkle cinnamon powder, and bake for 30 minutes at 180°C. Cool it and slice evenly to store. 

Banana Choc-Chip Zucchini Health Bar

Love fluffy chocolate bars? This zucchini enriched health bar will sort your morning diet. To make this, you will need to mix oat flour coconut flour, a pinch of baking powder, salt, and cinnamon. Take another bowl to add zucchini, banana, applesauce, low-fat milk, and vanilla essence. Spread the dough evenly and bake for 35 minutes at 180°C. 

Blueberry Potato Fortified Bar

This breakfast bar comes with only 70 calories per serving plus all the ingredients shout out of no gluten! 

How to make it? 

  • Roast a sweet potato. Scoop the inside and mash it nicely.
  • Add coconut oil, egg, organic raw honey, vanilla extract, and the mashed sweet potato in a mixing bowl.
  • Then add almond meal, coconut flour, and a pinch of baking powder. Give it a nice mix.
  • Pour the batter into a pre-greased baking pan and tap the pan to avoid air bubbles.
  • Sprinkle a generous amount of blueberries on the top and push them to settle down
  • Bake for 45 minutes or until it is cooked thoroughly.
  • Let it cool before serving or storing.

Simple Oatmeal Granola Breakfast Bar

This is the most simple yet the healthiest one. All you need to do is add different types of nuts and seeds for a healthy start. 

How to prepare 

  • Mix banana and applesauce thoroughly.
  • Add all the dry items like dried cranberries, pumpkin seeds, sunflower seeds, finely grounded flax seeds, cinnamon powder, and oats in a separate bowl.
  • Mix the banana puree with the dry ingredients and mix well.
  • Transfer the dough to the baking pan and press down gently.
  • Bake until it turns golden, and the sides are no more sticking to the pan
  • Let it cool for 20-25 minutes, cut them into slices, and store them in an airtight container.

Raspberry Oatmeal Cereal Bar

This is my personal favorite as it can lift anyone’s breakfast spirit with vibrant color and a wide flavor palette.  

How to make it? 

  • Preheat your oven at 180°C and prepare a baking pan by greasing it and place an aluminum foil.
  • Roast some coconut flakes till they turn golden and aromatic
  • Take a mixing bowl, add flour, salt, sugar, coconut to a medium-sized bowl. Crack two eggs and milk, stir until the dough is made.
  • Keep ¾ of the dough aside, place the rest onto the prepared pan, and press it evenly.
  • Crush 6 ounces of raspberries in a bowl and spread over the dough evenly.
  • Top it up with the remaining dough. Crumble the dough to give a rustic look.
  • Bake it for 25 minutes till it’s golden brown. Serve it when it’s cold.

Banana Butterscotch with Chocolate Cast Breakfast Bar

The banana butterscotch chocolate bar is a protein-rich vegan alternative and is made with whole grains. Healthy enough? Plus, this recipe is for people who are not fond of bananas, have a growing toddler, or are vegan.

The recipe 

  • Preheat the oven at 180°C for 10-15minutes.
  • Prepare the cake frame by greasing it with melted butter or oil and line it with parchment paper.
  • Take a large mixing bowl, add banana puree(10-12 bananas), a quarter teaspoon of nutmeg, and cinnamon powder. Stir it nicely.
  • Add some grounded sugar and blend it thoroughly.
  • Sieve 3 tablespoons of chocolate powder, a pinch of baking powder and baking soda, and the required flour in the mixing bowl.
  • Give it a nice stir but do not overdo it.
  • Pour the batter into the prepared cake frame and bake it for another 20 minutes. Insert a skewer and see if it comes out clean.
  • Let the chocolate bar rest for a while at room temperature, or freeze it before serving.
